Ingredients:

  • Hung curd (½ cup)
  • Paneer
  • Chopped onions, green chillies, and ginger paste
  • Black pepper powder, cumin powder, salt
  • Grated cheese, breadcrumbs, and gram flour

Method:
Tie the curd in a muslin cloth and hang it for a few hours to drain all the water. Mix it with paneer, cheese, spices, breadcrumbs, and besan to form a dough. Shape into kebabs and deep fry until golden brown. Serve hot with mint chutney.

2. Curd Paratha – A Flavorful Summer Twist

This paratha is soft, slightly tangy, and filled with herbs and spices that make it ideal for a light lunch.

Ingredients:

  • Wheat flour, curd
  • Ajwain (carom seeds), chopped green chillies
  • Turmeric, salt, chopped mint leaves
  • A spoon of ghee

Method:
Mix all ingredients with flour and knead into a soft dough. Let it rest for 10 minutes. Roll out into parathas and roast on a hot tawa using ghee until golden brown. Serve with curd or pickle.

3. Bhindi in Curd Gravy – A Tangy Treat

Ladyfinger (bhindi) in curd gravy is a savory and cooling dish, perfect with roti or rice.

Ingredients:

  • Bhindi (ladyfinger), onions, spices
  • Curd, mustard seeds, curry leaves, green chillies, ghee

Method:
Lightly fry the bhindi and set aside. In the same pan, sauté onions until golden, add spices, then add curd and bhindi together. Let it simmer. For tempering, heat ghee, add mustard seeds, curry leaves, and green chillies, and pour over the dish. This flavorful tadka elevates the taste to another level.
